Brownie Sandwich

1 box brownie mix
cool whip

Make brownies as directed on the box. Spread onto cookie sheet and bake as directed. Use a cookie cutter and cut out brownies into cookies. Put cool whip in the middle of two cookies.

Peanut Butter Fingers

1 cube margarine
1/3 c. sugar
1/2 c. brown sugar
1 egg
3/4 c. peanut butter
1/4 tsp. salt
1/2 tsp. baking soda
1 c. flour
1 c. oatmeal

Combine ingredients together and press into a 9 X 13 pan and bake at 350 for 10 mins. Top with 1 c. whipped peanut butter. I do this right after it comes out of the oven so it will harden a little when it cools down. I wait until it is completely cool before I put the frosting on.

Frosting:
3 Tbsp. softened margarine
3 Tbsp. ocoa
1 Tbsp. corn syrup or honey
1/2 tsp. vanilla
1 c. powdered sugar
1 Tbsp. milk

Beat butter, cocoa, corn syrup and vanilla until blended. Add powdered sugar and milk; beat until smooth, immediately spread over fingers.

Awesome Sugar Cookies

1 c. Crisco butter shortening or 1 stick Crisco butter flavor all vegetable shortening sticks
1 1/2 c. granulated sugar
1/2 c. firmly packed brown sugar
2 tbsp. milk
3 lg. eggs, lightly beaten
1 tsp. vanilla extract
4 c. flour
1 1/2 tsp. baking soda
1 tsp. salt
1 1/2 tsp. cream of tartar
Colored sugar and sprinkles

Frosting:

4 c. powdered sugar
1/3 c. Crisco butter shortening
1 1/2 tsp. vanilla extract
6-7 tbsp. milk
food coloring

Combine shortening, sugars in large bowl; beat at medium speed until well blended. Add milk. Beat in eggs, one at a time. Add vanilla. Combine flour, baking soda, cream of tartar and salt in separate large bowl. Mix into shortening mixture until well blended. Chill 1 hour. Heat oven to 350. Roll out 1/3 of dough at a time to about 1/4 inch thickness on floured surface. Cut out with cookie cutters. Place 2 inches apart on ungreased baking sheets. Bake 6-8 mins. or until edges of cookies are slightly golden. Remove immediately to cooling rack.

Frosting:

Combine powdered sugar, shortening and vanilla in bowl with electric mixer; slowly blend in milk to reach desired consistency. Beat on high speed for 5 mins. or until smooth and creamy. Tint frosting with food coloring. Decorate cookies as desired.

Chcolate Chunk Cookies

1 c. flour
1 c. whole wheat flour
1/2 c. quick cooking oats
1 tsp. baking soda
1/2 tsp. salt
1 c. sugar
1/2 c. packed brown sugar
1/3 c. butter or margarine
2 egg whites
2 tbsp. milk
1 tsp. vanilla extract
1 pkg. semisweet chocolate chips

Preheat oven to 375. Coat baking sheets with cooking spray. In large bowl, combine flours, oats, baking soda and salt. In another large bowl, combine sugars, butter, egg whites, milk and vanilla extract. Add the flour mixture and stir until moistened. Stir in chocolate chips. Drop by teaspoonfuls 2 inches apart on cookie sheet. Bake 10-12 mins. or until lightly browned around the edges. Places on racks to cool. Makes 48 cookies.

Pumpkin Chocolate Chip Cookies

1 stick butter or margarine, room temperature
1 1/2 c. sugar
1 egg
2 1/2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. nutmeg
1 tsp. cinnamon
1/4 tsp. salt
1 c. pumpkin
1 tsp. vanilla
1 pkg. (6 oz) semi-sweet chocolate chips (I use a few more)

Beat together butter, sugar and egg until fluffy and well mixed. Add flour, baking powder, baking soda, nutmeg, cinnamon and salt. Stir in pumpkin until well mixed. Add vanilla and chocolate chips and blend thoroughly. Drop by tablespoons onto greased or sprayed cookie sheet. bake 350 degrees about 15 mins. or until starting to turn brown. This recipe makes soft cake like cookies that taste even better the next day.

Gingerbread Cookies

1 1/3 c. shortening
1 c. sugar
1 c. molasses
2 eggs
1 tsp. baking powder
2 tsp. baking soda
2 tsp. cinnamon
2 tsp. ginger
2 tsp. cloves
1/2 tsp. nutmeg
1 tsp. salt
6 c. flour, sifted

In a Bosch, ream 1st 3 ingredients. Add eggs. Mix in dry ingredients, after sifting them. Chill dough 2 hours overnight. Roll dough on floured board 1/4 inch thick. Bake at 350 for 8-12 mins.

Chocolate Chip Oatmeal Cookies

2 cups butter (margarine or shortening)
2 cups sugar
2 cups brown sugar
4 eggs

Cream together then add dry ingredients.

3 cups flour
4 cups oatmeal, blended
1 tsp salt
2 tsp. baking soda
24 oz. choc chips

Bake at 375 for 6-10 mins.

Good for you Chocolate Chip Cookies

1 1/4 c. flour
1 1/4 c. whole wheat flour
1 tsp. baking soda
1/2 tsp. salt
3/4 c. reduced calorie margarine
2/3 c. sugar
2/3 c. brown sugar
1/4 c. applesauce
1 tsp. vanilla
1 large egg
1 large egg white
1/2 c. chocolate chips

Combine first 4 ingredients in bowl. Stir well and set aside. Combine margarine and sugars in a large bowl. Beat at medium speed until light and fluffy. Add applesauce, vanilla, egg and egg white. Beat well. Add dry ingredients. Stir until well blended and add choc. chips. Bake 350 for 12 mins.

Chocolate Chewies

2/3 C. margarine
2 C. brown sugar
2 eggs
2 C. flour
1/4 tsp. salt
1 tsp. b. powder
1 C. chocolate chips
1/2 C. nuts

Mix together dry ingredients, add to sugar, eggs and margarine and spread into jellyroll pan and bake 350 for 20 mins. Cut into squares while warm.

Oatmeal Cookies

1 c. shortening
1 1/2 c. brown sugar
2 eggs
1/2 c. buttermilk or sour milk
1 3/4 c sifted flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 tsp. ground nutmeg
3 c. quick cooking rolled oats
1/2 c. chopped walnuts (optional)

Cream shortening, sugar and eggs together till light and fluffy. Stir in buttermilk. Sift together dry ingredients; stir into creamed mixture. Sir in oats, raisins and nuts. Drop from tablespoon 2 inches apart on lightly greased cookie sheet. Bake at 400 degrees about 8 mins. Cool slightly before removing from pan.

Mrs. Fields Choc Chip Cookies

1 c. butter
1 c. brown sugar
1 c. sugar
2 eggs
1 tsp. vanilla
2 c. flour
2 1/2 c. oatmeal
1/2 tsp. salt
1 tsp. baking powder
12 oz. choc chips
1 4 oz Hershey candy bar

Mix all ingredients together, except candy bar. Bake cookies at 375 for 6 mins. Once cookies come out of oven, grate the candy bar over each cookie.

Mock Oreo Cookies

2 boxes of Devil's food cake mix
1/2 c. cocoa
4 eggs
1 1/2 c. shortening


Mix all ingredients together. Roll into 1 1/2 inch balls. Do not grease pan, there is enough in the cookie dough. Bake at 350 for 7-8 mins. or until lightly cracking. Try not to overbake. Frost cookies with creak cheese frosting.

Easy Peanut Butter Cookies

1 cup peanut butter
1 cup sugar
1 egg

Mix all ingredients with an electric mixer. Place in small balls on baking sheet. Make criss cross pattern with a fork. Bake at 350 degrees for 8-10 mins. Makes 24 cookies.

Best Ever Chocolate Chip Cookies

So someone else really needs to post some stuff! I'm bored so I will post another one that seems to be a crowd pleaser. :)

Chocolate Chip Cookies

2 cubes butter, softened
3/4 C sugar
3/4 C brown sugar
2 eggs
1 t baking soda
1 t salt
1 t vanilla
regular sized box of instant vanilla pudding mix
12 oz bag of ghiradelli chocolate chips (silver bag)
3 cups of flour

Mix everything except for the chocolate chips and flour together. Then add flour 1/2 cup at a time. It will seem so thick but you really do need all of that flour! Add bag of chocolate chips..(the brand of chocolate chips really does make a difference on this one!) Bake at 375 for 8-10 minutes or until just barely golden brown. When you take them out, they may not look all the way done but if you let them sit for 15 mins the pudding will set and they will be perfect!
