Smoothies

Strawberry Banana:

1 banana
4 strawberries
1/2 c. milk
1/2 c. apple juice

Pina Colada:

1 coconut yogurt cup
1/2 frozen banana
10 oz. crushed pineapple
1 c. milk

Strawberry:

5 strawberries
1 strawberry yogurt cup
4 oz. lemonade (can use crystal lite)

Tangy Summer Blend:

1 peach or nectarine
1 peach yogurt cup
1/2 c. pine, orange, guava juice
1/2 c. lemonade or crystal lite

Blueberry:

1 blueberry yogurt cup
1 c. blueberries
1 c. milk

Pineapple Berry Crush:

1 c. orange juice
1/4 c. pineapple juice
4 oz. pineapple
6 strawberries
12-15 raspberries
8-10 boysenberries
12-15 blueberries
1/2 any flavor yogurt cup

Kiwi Strawberry:

3 peeled kiwi
1 c. frozen banana slices
3/4 c. pineapple juice
1/2 c. strawberries

Strawberry Pineapple Paradise:

8 strawberries
2 c. pineapple juice
1/2 c. orange juice
1 vanilla yogurt cup

Peaches and Dreams:

1 1/4 c. apple juice
3-5 peach slices
4 strawberries
1 banana
1/8 tsp. cinnamon

Raspberry Lime:

7-10 raspberries
1 raspberry yogurt cup
4 oz. limeade or crystal lite

Each recipe makes approximately 1/2 of a blender. Yogurt cups refer to 6 oz. fruit flavored yogurts not frozen yogurt. Make sure to freeze yogurt cups ahead of time. All fruit should be blended frozen. If you are not using frozen fruit or frozen yogurt cups, you will need to add ice to the blender.

Frozen Snickers

2 c. low fat ice cream
1 c. ff cool whip
1/4 c. crunchy peanut butter
1 pkg. sugar free chocolate pudding mix

Mix together with electric mixer. Put into 8 x 8 pan and freeze for 2 hours. Cut into 8 bars.

Yummy Cola Chicken

4 skinless boneless chicken breasts
1 can diet coke
1 c. ketchup

Place the chicken in a nonstick skillet. Cover with the cola and ketchup. Bring to a boil, reduce heat and cover the skillet. Simmer for about 45 mins. Remove lid and raise heat. Remove the chicken from the pan and cook the sauce till it thickens. Serve chicken topped with sauce.

Spaghetti Squash

1 each squash, spaghetti
15 oz. tomatoes with green chilies
1 each onion, chopped
1 Tbsp. olive oil
1 Tbsp. flour
1 clove garlic-minced
salt and pepper to taste
2 tsps. parmesan cheese

Cut squash in half length wise. Place squash halves, cut side down, with 1 cup water in microwave safe dish. Microwave on high for 10 mins. or until tender, rotating dish half way. While squash cooks, spray a skillet with non stick cooking spray. Place half of sliced onion, along with garlic, in pan and cook over medium heat until onion is tender. Add can of tomatoes with juice to pan and simmer for 5 mins. While tomatoes simmer, make roux: measure olive oil into a small saucepan, add the remaining onion slices and cook over medium heat until onion begins to brown. Add flour and stir to blend. Let mixture cook for a few mins until flour browns a little. Pick out and discard the onion slices. Spoon some of the tomato mixture into the flour roux and mix. Empty contests of sauce pan into tomato mixture in skillet. Stir and simmer a few mins. to thicken. Remove spaghetti squash from microwave and cool slightly. With a fork, shred pulp of squash, discarding skin. Add squash shreds to tomato mixture in skillet. Stir to blend. Scoop into bowls and serve topped with parmesan cheese.

Eggplant Parmigiana

1 med. size eggplant
3/4 c. mozzarella cheese
1 jar spaghetti sauce
1 egg
1 Tbsp. water
flour
parmesan cheese

Wash and peel eggplant. Cut into slices about 1/2 inch thick. Beat 1 egg with 1 Tbsp. water and then place some flour in a separate bowl. Dip eggplant slices into egg and then coat with flour. Fry in hot oil until golden. Drain on paper towels. Grease 9 X 13 pan and arrange eggplant in a layer on the bottom. Sprinkle parmesan cheese over the eggplant. Pour 1 jar of spaghetti sauce over that and then top with mozzarella cheese. Bake in 400 degree oven for 10-12 mins. Serve over your favorite pasta.

Sausage with Wild Rice

I don't know if this really counts as a recipe but it is one of our easy go to meals.

One smoked sausage round (shaped like a horseshoe-usually by the bacon, we get the light ones because the real ones are full of fat)
BBQ sauce
1 pkg. long grain wild rice mix

Cook rice according to box directions. Slice sausage into small 1 inch slices. Saute in skillet, turning over until each side browns a little. Add BBQ sauce to skillet (as much as you like) to flavor sausage. Heat together for a few mins. Serve over wild rice. Easy and so yummy.

Fajitas

1 bell pepper (red or green), sliced
1 medium onion, sliced
3 or 4 chicken breasts, thawed and cut into strips
Fajita seasoning packet
flour tortillas
cheese
salsa

Cook chicken in skillet with a little olive oil and salt and pepper until no longer pink. Add peppers and onions. Saute for a few mins. and then add seasoning packet with about 1/4 cup water. Stir together and allow everything to heat together for a few mins. Warm up tortillas in another pan. Enjoy! Another variation we do is shrimp instead of chicken. Just thaw shrimp and pull off tails (we buy the peeled, cooked, deveined ones) and then saute for just a few mins. until they are warm and then add everything else.

Pumpkin Chocolate Chip Cookies

1 stick butter or margarine, room temperature
1 1/2 c. sugar
1 egg
2 1/2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. nutmeg
1 tsp. cinnamon
1/4 tsp. salt
1 c. pumpkin
1 tsp. vanilla
1 pkg. (6 oz) semi-sweet chocolate chips (I use a few more)

Beat together butter, sugar and egg until fluffy and well mixed. Add flour, baking powder, baking soda, nutmeg, cinnamon and salt. Stir in pumpkin until well mixed. Add vanilla and chocolate chips and blend thoroughly. Drop by tablespoons onto greased or sprayed cookie sheet. bake 350 degrees about 15 mins. or until starting to turn brown. This recipe makes soft cake like cookies that taste even better the next day.

Potato Salad

6 potatoes boiled
8 boiled eggs
Peel boiled potatoes and cut into bite size pieces and place in large bowl. Peel eggs and cut whites into bite size pieces and place in bowl with potatoes. Lightly salt. Place egg yolks in a separate bowl.
1/2 onion chopped
1 tsp. minced garlic
Add to potatoes
1 c. mayo
1 1/2 Tbsp. mustard
salt and pepper
1 Tbsp. dill mix or 1/4 c. pickle juice
Combine with egg yolks
Mix

Combine egg yolk mixture with potato mixture. Add any more salt and pepper or garlic salt to taste. Refrigerate until served.

Fresh Salsa

3 Anaheim green chile's
3-7 jalapenos
1-2 red chile's or Hungarian wax
2 bell peppers, any color
2 med. onions or 1 large
1 bunch cilantro
1 whole head garlic
2 tsps. salt
2-3 limes
15-20 roma tomatoes

Spinach Artichoke Dip

2- 6 1/2 oz. jars of marinated artichoke heart, drained and chopped
1- 10 oz. pkg. frozen chopped spinach, thawed and drained
1/2 c. sour cream
1/2 c. mayo
1 garlic clove pressed
3/4 c. parmesan cheese
1/2 tsp. lemon juice

Preheat oven to 375. Mix together and bake 20-25 mins.

Gingerbread Cookies

1 1/3 c. shortening
1 c. sugar
1 c. molasses
2 eggs
1 tsp. baking powder
2 tsp. baking soda
2 tsp. cinnamon
2 tsp. ginger
2 tsp. cloves
1/2 tsp. nutmeg
1 tsp. salt
6 c. flour, sifted

In a Bosch, ream 1st 3 ingredients. Add eggs. Mix in dry ingredients, after sifting them. Chill dough 2 hours overnight. Roll dough on floured board 1/4 inch thick. Bake at 350 for 8-12 mins.

Oatmeal Bread

2 c. white flour
1 c. whole wheat
1/2 c. oats
1/4 c. sugar
3 tsp. baking powder
3/4 tsp. salt

Mix

1 egg
1 1/2 c. fat free milk
3 Tbsp. oil

Mix and then mix both sets of ingredients together. Place in pie pan and sprinkle with 2 Tbsp. oats. Bake at 350 for 40-50 mins.

Foil Chicken and Mushroom Dinner

1 6oz. pkg. of Stove Top stuffing mix
1 3/4 c. water
6 small boneless skinless chicken breast halves about 1/2 inch thick
4 slices Oscar Mayer thin sliced smoked ham chopped
1 c. sliced fresh mushrooms
1 c. frozen peas
1 can cream of mushroom soup

Preheat oven to 400. Mix stuffing mix with 1 1/2 cups of the water. Dividing evenly, place stuffing in center of 6 separate sheet of aluminum foil. Layer chicken, ham, mushrooms and peas on top of stuffing dividing evenly between each foil. Mix soup with remaining 1/4 c. water. Pour equal amounts over each pack. Wrap up foil and place on cookie sheet. Bake 30-35 mins. or until chicken is cooked through. Let stand 5 mins. before serving.

Chocolate Chip Oatmeal Cookies

2 cups butter (margarine or shortening)
2 cups sugar
2 cups brown sugar
4 eggs

Cream together then add dry ingredients.

3 cups flour
4 cups oatmeal, blended
1 tsp salt
2 tsp. baking soda
24 oz. choc chips

Bake at 375 for 6-10 mins.

Carmel Brownies

1 German chocolate cake mix
1/3 cup evaporated milk
1/2 c. butter

Mix together. Split dough in half and spread one half in 9 X 13 pan. (Dough will be thick and pliable) Bake exactly 6 mins. at 350.

Caramel:

50 pieces of caramel
1/3 c. evaporated milk

Heat, stirring constantly on med-low until melted. Spread caramel on baked brownie. Place remaining dough on top. (Take pieces and pat them flat in your hand and then place them on top)

Bake at 350 for 25 mins.

Easy Wheat Muffins

1 c. white flour
1/2 tsp. salt
4 tsps. baking powder
1/2 c. brown sugar
1 c. whole wheat flour

Mix and then add:

1 c. milk
2 beaten eggs
1/3 c. oil

Bake in greased muffin tins at 425 for 8-10 mins or mini muffins 5 mins.

Creamy Potato Soup

2 cups ham (pre-cooked)
4-6 potatoes
1-2 cups broccoli
2 cups grated cheese
2 cans of cream of chicken or mushroom soup
milk

Peel and preboil potatoes. Drain water. Add ham, broccoli, soup and milk (add milk to desired consistency at least 1/2 cup) Bring to a boil, stirring occasionally. Reduce heat and let simmer until ready to serve. Add cheese 5 mins. before serving.

Merry Munch of Christmas

In a big pan or bowl, put 1 box Chex cereal and 1 can nuts. Pour syrup over dry ingredients and gradually mix. Spread on cookie sheet and sprinkle with coconut.

Salsa

1 can stewed tomatoes (10, 12 or 14 oz.)
1/2 onion chopped
8-12 slices of jalapeno peppers chopped-depending on how hot you like it

Add a pinch of salt and pepper and garlic salt to your liking. Blend slightly in blender just enough to chop tomatoes up a little

Fudge

1 can of condensed milk
4 1/2 cups of sugar
1 tbsp. vanilla
2 pkgs. milk chocolate chips
2 cubes butter
2 cups walnuts

Mix milk and sugar in to a 4-6 quart pan and heat on stove. When it starts to boil, set the timer for 6 mins. and stir constantly while boiling. After six mins, add the vanilla, chocolate chips and butter. Stir constantly for 3 mins. Mix nuts in to the fudge and pour it into a casserole dish. Spray the dish with Pam before. Put into the fridge to set up. Enjoy!

Dad's bread

Remember not to "throw it away" lol. Good ole Georgia.

10-14 cups wheat flour
2 tbsp. yeast
2 tbsp. dough enhancer
2 tbsp. glutton
2 tbsp. salt
1 tbsp. sugar
2/3 c. oil
2/3 c. honey

Blend 10 cups of flour with the rest of the ingredients in the mixer. While mixing, add flour until the dough starts to pull away from the middle of the mixer. Let the mixer go for about 5 mins while you get the bread pans out and spray them with Pam. After mixing, take the dough out of the mixing bowl and cut into 5 equal sizes. Make each into a loaf and put in the pans. Place bread in the oven and let raise for a hour to an hour and a half. Turn the oven on to 350 degrees and bake for 36 mins. Good luck!

Good for you Chocolate Chip Cookies

1 1/4 c. flour
1 1/4 c. whole wheat flour
1 tsp. baking soda
1/2 tsp. salt
3/4 c. reduced calorie margarine
2/3 c. sugar
2/3 c. brown sugar
1/4 c. applesauce
1 tsp. vanilla
1 large egg
1 large egg white
1/2 c. chocolate chips

Combine first 4 ingredients in bowl. Stir well and set aside. Combine margarine and sugars in a large bowl. Beat at medium speed until light and fluffy. Add applesauce, vanilla, egg and egg white. Beat well. Add dry ingredients. Stir until well blended and add choc. chips. Bake 350 for 12 mins.

Yummy Oven Roasted Potatoes

Got this one from the ever fabulous Madre.

2-3 potatoes, washed and cut into bite size pieces
1 envelope onion soup mix
paprika
olive oil

Chop up potatoes into 2 inch size pieces. Throw into a ziplock bag. Add 2 or so tablespoons of olive oil (I just pour a bit in), then add onion soup mix. Seal bag and jostle potatoes around until they are well coated. Pour into a greased 9X13 pan. Sprinkle top with paprika. Bake at 325 for 45 mins.

Crockpot Chicken Burritos

Can these be any easier? I don't think so!

2-4 chicken breasts
1 can black beans, drained
1 can corn, drained
1 16 oz jar of your favorite salsa

Combine in crock pot for 4-6 hours on low. Shred chicken and serve in tortillas with cheese and sour cream.

Parmesan Chicken

4 Chicken breasts
1 egg
1/2 C milk
bread crumbs
mozzarella cheese (sliced or shredded)
1 jar spaghetti sauce
parmesan cheese

Whisk together egg and milk in shallow bowl. Place bread crumbs in another bowl. Dip chicken in egg mixture and then coat with bread crumbs. Heat skillet with 1 or 2 Tablespoons of olive oil over med-high heat. Brown chicken on both sides until golden. Set chicken in greased 9X13 pan. Either sprinkle mozz cheese on each breast or place a slice or 2 on each. Pour entire jar of spaghetti sauce over all. Sprinkle with parmesan cheese and bake at 350 for 25 to 30 minutes or chicken is no longer pink. Serve over spaghetti

Chocolate Peanut Butter Passion Bars

These are the best freakin brownies I have ever had. I am making them tonight for a girl's night. They are even better the next day!

1/3 C vegetable oil
2 eggs
1 pouch Ghiradelli Triple Choc brownie mix (yes the brand matters here!)
1 C peanuts, chopped

Peanut Butter Filling:
14 oz can sweetened condensed milk
1/2 C peanut butter

Stir together oil and eggs. Add brownie mix and peanuts. (I find that an easy way to chop the peanuts is to put them in a ziplock bag and smash them with a rolling pin). Stir until moistened. Press half of brownie mixture into bottom of greased 9X13 pan. Stir together condensed milk and peanut butter until smooth. Spread evenly over brownie layer in pan. Drop round spoonfuls of reserved brownie mixture over peanut butter layer.

Bake at 350 for 25-30 minutes or until the top is set.

Pumpkin Crisp

1 pkg of yellow cake mix
1 egg
1/2 cup butter, melted
1 (29 oz can) pumpkin puree
2 eggs
1 tsp. ground nutmeg
1 tsp. ground cinnamon
1/2 c. white sugar
2/3 c. evaporated milk
3/4 c. white sugar
1/2 c. butter, softened

Preheat oven to 350. Set aside 1 cup of cake mix for the topping. Combine remaining cake mix, 1 egg and 1/2 c. butter melted. Pat into a 9 X 13 baking pan. In a large bowl, mix pumpkin, 2 eggs, nutmeg, cinnamon, 1/2 c. sugar and 2/3 c. evaporated milk. Pour pumpkin mixture over the cake mix crust. In a small bowl, combine 1 cup cake mix and 3/4 c. sugar. Cut in 1/2 c. softened butter until mixture is crumbly. Sprinkle on top of pumpkin mixture. Bake at 350 for 55 mins.

Oatmeal Cookies

1 c. shortening
1 1/2 c. brown sugar
2 eggs
1/2 c. buttermilk or sour milk
1 3/4 c sifted flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 tsp. ground nutmeg
3 c. quick cooking rolled oats
1/2 c. chopped walnuts (optional)

Cream shortening, sugar and eggs together till light and fluffy. Stir in buttermilk. Sift together dry ingredients; stir into creamed mixture. Sir in oats, raisins and nuts. Drop from tablespoon 2 inches apart on lightly greased cookie sheet. Bake at 400 degrees about 8 mins. Cool slightly before removing from pan.

Garlic Bread

1 pkg of dry ranch dressing
1 cube butter melted
1 loaf of french bread

Mix dressing with butter and spread on french bread. Broil in oven until done.

Chicken Fettuncine Alfredo

3-4 chicken breasts
2 cans of alfredo sauce
fettuccine noodles
1 pkg frozen broccoli

Boil chicken breast until cooked and then slice up in to bite size pieces and brown in olive oil. Boil noodles by package directions. Cook frozen broccoli. Add chicken, noodles and broccoli with alfredo sauce. top with parmesan cheese.

Fried Chicken

Chicken (as much as you want to eat)
1/2 cube butter
1 c. flour

Dip chicken in melted butter and flour and fry in olive oil on medium high. Serve with mashed potatoes and gravy. So yummy!

Mrs. Fields Choc Chip Cookies

1 c. butter
1 c. brown sugar
1 c. sugar
2 eggs
1 tsp. vanilla
2 c. flour
2 1/2 c. oatmeal
1/2 tsp. salt
1 tsp. baking powder
12 oz. choc chips
1 4 oz Hershey candy bar

Mix all ingredients together, except candy bar. Bake cookies at 375 for 6 mins. Once cookies come out of oven, grate the candy bar over each cookie.

Mock Oreo Cookies

2 boxes of Devil's food cake mix
1/2 c. cocoa
4 eggs
1 1/2 c. shortening


Mix all ingredients together. Roll into 1 1/2 inch balls. Do not grease pan, there is enough in the cookie dough. Bake at 350 for 7-8 mins. or until lightly cracking. Try not to overbake. Frost cookies with creak cheese frosting.

Calzones

(makes 2)

2 C flour
1 1/2 t salt
1 t sugar
1 packet yeast
1/4 C + 1 T water
3 T olive oil

Dissolve yeast and sugar in warm water. Allow to sit until there are a few bubbles on top. Mix flour and salt and then add yeast mixture and olive oil. Knead into a soft dough (you may need to add more olive oil). Divide dough in half and roll out into oval shape. I just use spaghetti sauce and spread on half of the oval. Then add cheese and any other toppings. Fold other half over and pinch sides together. Stab with fork. Bake on cookie sheet that you have covered with foil. Bake at 450 for about 12 mins. Heat up remaining spaghetti sauce and use for dipping.

Breakfast Muffins

This is a good ole family favorite! lol.

1/3 c. oil
1/2 c. sugar
1 egg
1 1/2 c. flour
1/2 tsp baking powder
1 tsp. salt
1/4 tsp. nutmeg
1/2 c. milk

Mix first three ingredients together. Add flour which has been mixed with spices. Add 1/2 c. milk and mix well. Bake in microwave muffin pan 3 mins. Dip in melted butter and a mixture of sugar and cinnamon.

Chocolate Chip Oatmeal Cake

1 c. oatmeal
1 3/4 c. boiling water
1 c. brown sugar
1 c. white sugar
1/2 margarine
2 large eggs
1 3/4 c. flour
1 tsp. soda
1/2 tsp. salt
1 Tbsp. cocoa
1 pkg. choc chips

Pour boiling water over oatmeal and let stand 10 mins. stir in margarine until melted and add sugars and eggs. mix well. Add dry ingredients and 1/2 choc chips. Pour into 9 X 13 pan and top with rest of choc. chips. Bake at 350 for 40 mins.

Stroganoff

Round steak
flour
paprika
garlic salt
onion salt
16 oz sour cream

Pound steak into mixture of above ingredients. Cut steak into cubes. Brown in oil. drain grease. Add 2 cans of beef consume soup and 1/2 can of water. Simmer on low 1-2 hours. add carton of sour cream before serving. Serve over rice or noodles.

Chicken Rollups

2-3 boneless chicken breasts
4 oz. cream cheese
2 pkgs of crescent rolls
1/2 cube butter
1/2 c. bread crumbs

Boil chicken breasts approx. 45 mins until cooked. Chop up and mix with cream cheese. Spoon mixture into crescent rolls. Roll up and pinch sides to make a ball. Dip in melted butter and bread crumbs.

Bake 375 for 12-15 mins.
Top with chicken gravy mix

Tatertot Casserole

1 lb. hamburger
1/2 onion minced
1/2 c. milk
1/2 c. bread crumbs
salt and pepper
1 can cream of mushroom soup
1/2 can water
1/2 pkg onion soup mix
1 c. grated cheese
1 pkg tater tots


Mix first 5 ingredients, spread into greased casserole pan. Mix together remaining ingredients except tater tots and pour on top of hamburger mixture. Line with tater tots. Bake 350 for 1 hour.

Cheesy Potatoes

2 lbs. frozen diced hash browns
1/2 cup chopped onion
2 cans cream of chicken soup
2 cups sour cream
2 cups grated cheddar cheese
1/4 cup melted butter
1 tsp. salt

Topping:
2 cups crushed corn flakes (mix with 2 T melted butter)

Mix all ingredients together and spread in greased 9 X 13 pan. Bake at 350 for 50 mins. or until hot and bubbly. This is a yummy EASY recipe.

Gooey Cinnamon Rolls

Okay, so this is a WW (weight watchers) one...I hope that's okay if I share some of those that I have. These are actually pretty good.

1 can of Pillsbury biscuits
1 1/2 tsp. ground cinnamon
40 small or 10 large marshmallows
1/4 cup splenda

Preheat oven to 400. Spray 10 spots in muffin pan with cooking spray. Separate the biscuits and flatten each into a 4 inch circle. In a small bowl, combine Splenda and cinnamon. Dip each biscuit into the cinnamon/Splenda mixture. Place 4 small or 1 large marshmallow in the center of each biscuit. Bring edges up to form balls. Place each in a prepared muffin well seam side down. Bake for 8-10 mins. Remove rolls from pan immediately and cool slightly on wire rack.

7 Layer Dip

1 can jalapeno refried beans
3 avacados
1 packet guacamole mix
1/2 C mayo
1 C sour cream
1/2 packet taco seasoning
bundle of green onions
2-3 tomatoes
2 C cheese - any kind. I usually do monteray jack.
small can of chopped olives

Spread refried beans in bottom of pan (you can make this in 9X13 or do a smaller version in an 8X8 depending on how much you need). Mash avacados and add guacamole mix. Spread over beans. Mix mayo, sour cream and taco seasoning. Spread over guacamole. Chops onions and tomatoes and sprinkle over sour cream mixture. Cover top with cheese. Sprinkle chopped olives over cheese.

Italian Cheesy Bread

I got this from my friend Emily. They kind of remind me of the breadsticks you get at papa murphys. Goes well with homemade pizza or any kinda yummy pasta dish. Or really anything. They are just good.

3 t yeast (1 packet)
1 C warm water (to divide)
1 t sugar
2 T canola oil
1 t salt
2 1/2-3 C flour

Topping:
1/3 C italian salad dressing
1/4 t garlic powder
1/4 t oregano
1/4 t thyme
dash of pepper
1 C shredded mozzarella

Dissolve yeast in 1/4 C warm water with teaspoon of sugar. Let stand for 5 mins. Add oil, salt, remaining water, and 2 C flour. Beat until smooth. Stir in more flour (1/2 C or 1 C more) to form a soft dough. Knead until smooth and elastic. Let rise in a warm place until dough doubles in size, about 20 mins. Punch dough down and then flatten out on a greased pizza pan. Let rise for 5-10 mins. Spread salad dressing on top of dough. Combine spices and sprinkle over top. Top with mozzarella and bake at 450 for 15-20 mins.

Zucchini Bread

This is Mom's recipe I believe. So easy and so yummy.

2 C sugar
3 eggs, beaten
1 C oil
3 C flour
2 t cinnamon
1 t baking soda
1 t salt
1 t baking powder
2 t vanilla
3 1/2 C peeled and shredded zucchini (2 large or 3-4 small)

Mix ingredients with mixer (or a hand mixer if you are poor like me and have to make due even though you want a mixer so bad!) and pour into greased loaf pans. Bake at 350 for one hour or until toothpick comes out clean.

Smothered Pork Burritos

2 lbs pork roast
28 oz can green chili enchilada sauce
1 or 2 cans of black beans
2 C brown sugar
shredded cheese
chopped cilantro
flour tortillas

Season pork with garlic salt and cook in crockpot for 6 to 8 hours on low. Shred pork and keep warm. In large bowl combine 1/2 of the chili sauce with brown sugar. Stir in pork. Fill tortillas with beans, pork mix, cheese and cilantro. Roll up and fill greased 9X13 pan. Pour rest of chili sauce over top and sprinkle with any remaining cheese.

Bake at 350 for 20-25 mins.

Amazing Banana Bread

Not lying this bread is so freaking good! Not very fab for the figure though. :)

3 C flour
1 1/2 t salt
1 1/2 t baking powder
2 1/2 C sugar
3 mashed bananas
1/2 C vegetable oil
3 eggs
1/2 C butter, melted
1 1/2 t vanilla
1 C buttermilk (or you can put 1 C of milk in a bowl and add 1 T vinegar. Let stand for 10 mins)
1 1/2 t almond extract

Mix all ingredients together with electric mixer. Pour into greased bread pans (2 normal size ones, or 4 little ones). Bake at 350 for 1 hour or until toothpick comes out clean (I often have to bake it longer than an hour to make sure the center is done).

Glaze:
3/4 C sugar
1/2 t vanilla
1 T butter
1/4 C orange juice
1/2 t almond extract

Mix all ingredients in sauce pan. Bring to a boil and boil for 20 seconds. Pour over hot cooked bread.

This bread freezes well also. I find it easier to let the bread cool for 10 or 15 minutes and then turn the pans over and pop the loaves out onto a wire rack. Then pour the glaze on. It will make a mess on the counter top but then the glaze gets to more of the bread. It is really SO GOOD!

Chocolate Pudding Delight

21 pecan sandies cookies, crushed
12 oz cool whip
8 oz cream cheese
1/2 C melted butter
1 C powdered sugar
1 pkg chocolate pudding

Crush cookies and add melted butter. Press into greased 9X13 pan. Bake at 350 for 10 mins. Let cool. Mix cream cheese, 8 ounces of the cool whip and powdered sugar until smooth. Spread over crust. Mix pudding according to directions and pour over cream cheese mixture. Let chill for at least 4 hours. Top with remaining cool whip.

Crunchy Baked Chicken

1 egg
1 T milk
1 small can french fried onions, crushed
3/4 C parmesan cheese
1/3 C bread crumbs
1 t paprika
1/2 t salt
1/4 t pepper
3-4 chicken breasts
2 T butter, melted

Whisk egg and milk in shallow dish. Combine onions, cheese, bread crumbs, paprika, salt and pepper in a separate shallow dish. Dip chicken in egg mixture and then roll in the bread crumb mixture. Coat well. Place chicken in greased 9X13 pan and bake for 55-60 mins at 350.

I just saw this in a Smith's coupon book and decided to try it. Raleigh and I both really loved the flavor of the chicken. Enjoy!

Easy Peanut Butter Cookies

1 cup peanut butter
1 cup sugar
1 egg

Mix all ingredients with an electric mixer. Place in small balls on baking sheet. Make criss cross pattern with a fork. Bake at 350 degrees for 8-10 mins. Makes 24 cookies.

Chicken Enchiladas

1 can chicken
1 cup sour cream
1 can cream of chicken soup
1 can green chilies
1 pkg tortillas
shredded cheese
1 can green enchilada sauce

In saucepan, heat up soup, sour cream and chilies. Mix in chicken and spread in tortilla. Wrap it up and line them in a casserole dish. pour sauce over and sprinkle with cheese. Cook 1 hour at 350.

Pork Chili Verde

1 lb. pork
2 cans green chillies
1 pkg. tortillas
shredded cheese

Cut pork into bite size pieces. Brown in small amount of oil. Sprinkle with salt and pepper and oregano. When brown, sprinkle with small amount of flour and 1 cup water. Add 2 cans diced green chillies. Simmer until tender. Serve on tortillas with sour cream and cheese. Add a side of rice and beans.

Golden Stew

1 chopped onion
1 can cream of celery soup
1 jar of cheez whiz
1 pkg hot dogs
1 pkg frozen peas and carrots
6-8 potatoes (cut up in cubes)

Boil potatoes and onion until tender. Do not drain water. Add all other ingredients. Turn heat down and let it simmer for about 20 mins. Ready to serve with rolls.

Dinner in a Pumpkin

1/2 c. chopped onion
med. sized pumpkin
1 lb. ground beef
1 can water chestnuts
1 tsp. soy sauce
1 tsp. brown sugar
1 can cream of mushroom soup
2-3 cups cooked rice
salt and pepper

Clean out inside of pumpkin. Brown hamburger and onion together. Mix everything together and fill pumpkin. Put pumpkin on cookie sheet with some water around it. cook at 350 for 1 hour depending on if pumpkin is tender.

Chicken Ranch Wraps

Spread flour tortilla with 1 Tbsp. ranch dressing. Add lettuce, chicken and sprinkle with shredded parmesan cheese. Wrap up and enjoy!

Homemade Mac and Cheese

2 cans cream of chicken soup
1/2 cup milk
2 cups cheese
1/2 cup chopped onion
Elbow macaroni (you decide how much)

Cook macaroni. Mix soup, milk, onion and cheese to make a sauce. Mix sauce and macaroni together. Cook in over for 25 mins. on 350.

Cheese Ball

2 pkg. (8 oz) of cream cheese
1 sm. can crushed pineapple
1/4 cup finely chopped green pepper
2 Tbsp. finely chopped green onion
1 tsp. seasoning salt
1 cup crushed nuts (optional)

With cheese at room temperature, mix all ingredients except nuts. Mod mixture into two balls and roll in nuts. Chill in the fridge until ready to serve Serve with crackers.

Taco Salad

4 tomatoes sliced
1 head lettuce
1 lb. ground beef
1/2 pkg taco seasoning
1 can of black or kidney beans
1 can sliced olives
2 cups shredded cheese
1 bag Nacho Doritos, crumbled

Mix above ingredients together. Then mix the dressing ingredients. Toss the dressing in the salad right before you serve.

Dressing

2 tsp. lemon juice
1/2 c. vinegar wine
1/2 c. sugar
1/2 c. ketchup
1 c. salad oil
1/2 tsp. dry mustard or regular mustard
1 tsp.paprika
1 tsp. chili powder
1/2 tsp. garlic powder

Blend in Blender.

Lasagna

10 lasagna noodles uncooked
1 tube of Jimmy Dean hot sausage
2 jars of spaghetti sauce
16 oz cottage cheese
16 oz mozzarella cheese
1/3 cup Parmesan cheese

Preheat oven to 350. Brown sausage in deep skillet. Drain grease if necessary. add spaghetti sauce to meat and heat together a few mins. Mix cheeses in separate bowl, spray 9 X 13 pan, and layer lasagna as follows:

1/3 of the meat/sauce
5 noodles
1/2 of the cheese
1/3 of the meat/sauce
5 noodles
rest of cheese
rest of meat/sauce

Cover tightly with foil and bake for 1 hour and 15 mins. Sprinkle top with more Parmesan cheese. Let set about 10 mins. before serving. It's delish!

Crockpot BBQ Chicken

4 boneless chicken breast halves
1 medium onion
1/2 bottle of bbq sauce

Thaw chicken breasts and trim fat from meat. Place in crock pot with sliced onion. Pour about 1/2 bottle of bbq sauce over everything. Cook on low for 6-8 hours. Serve with wild rice or baked potatoes.

Garlic Cheese Biscuits

Just made these last night. They go so well with anything! I love them with soup in the fall also.

Garlic Cheese Biscuits

2 C bisquick
2/3 C milk
1/2 cup shredded cheddar cheese (Mozzarella is good too)
2 T butter, melted
garlic powder (about 1/4 t)

Mix bisquick, milk, and cheese. Drop spoonfulls onto ungreased cookie sheet. Bake at 450 for 8 to 10 minutes, or until toothpick comes out clean. Melt butter and add garlic powder. Brush over hot cooked biscuits.

Best Ever Chocolate Chip Cookies

So someone else really needs to post some stuff! I'm bored so I will post another one that seems to be a crowd pleaser. :)

Chocolate Chip Cookies

2 cubes butter, softened
3/4 C sugar
3/4 C brown sugar
2 eggs
1 t baking soda
1 t salt
1 t vanilla
regular sized box of instant vanilla pudding mix
12 oz bag of ghiradelli chocolate chips (silver bag)
3 cups of flour

Mix everything except for the chocolate chips and flour together. Then add flour 1/2 cup at a time. It will seem so thick but you really do need all of that flour! Add bag of chocolate chips..(the brand of chocolate chips really does make a difference on this one!) Bake at 375 for 8-10 minutes or until just barely golden brown. When you take them out, they may not look all the way done but if you let them sit for 15 mins the pudding will set and they will be perfect!

Creamy Italian Chicken

I just made this tonight for dinner and was reminded of how much I love it! I think some of you may already have this recipe or your own version or whatever, but I thought I would post it anyway.

It is so delicious and easy and even my children eat it! I usually make it with cornbread muffins, which are also delish. Plus, I LOVE the leftovers for lunch the next day.

Creamy Italian Chicken

2-3 chicken breasts
1/4 cup water
1 envelope italian salad dressing mix
8 oz cream cheese
1 can cream of chicken soup
1 can cream of mushroom soup
mushrooms (optional)


Place chicken breasts in slow cooker on low. Mix water and italian dressing mix and pour over chicken. Cook on low for at least 3 hours. Shred chicken with 2 forks. Mix soups and cream cheese together and stir in with chicken in the crock pot. Cook for an additional hour. Serve over egg noodles



Cornbread muffins

1 1/2 C flour
2/3 C sugar
1/2 C cornmeal
1 T baking powder
1/2 t. salt
1 1/4 C milk
2 eggs
1/3 C oil
3 T butter, melted

Mix everything together (I think technically you are supposed to mix dry ingredients separately but I am way too lazy for that) and pour into greased muffin tin. Bake at 350 for 18-20 minutes.

Sweet Asian Chicken

4-6 boneless chicken breasts cut into bite size pieces
2 eggs
1/4 cup milk
Cornstarch

Sauce:
1/2 tsp. garlic
3/4 cup sugar
1/4 cup brown sugar
1/2 cup vinegar
1/2 cup chicken stock or bouillon
1 Tbsp. soy sauce

Preheat oven to 350 and lightly spray 9 X 13 pan. Beat egg in small shallow bowl and add milk. Pour some corn starch in another shallow bowl. Heat oil in a fry pan at about medium to medium high heat. Dip chicken in egg/milk and then in cornstarch. Fry in oil until just golden brown on both sides. Meanwhile mix together the ingredients for the sauce. Place chicken in bottom of pain and then pour sauce mixture on top. Bake for 1 hour stirring once after 30 mins. Serve with rice and stir fry veggies.
